Swissôtel Le Concorde’s General Manager, Marcel Sawyere said "As we take shark fin out of our menus, we are doing our little own contribution in stopping the further depletion of this endangered species of the deep blue sea. The power of each of our guest's culinary choice and the alternative selection that we provide can make a difference in the battle to save the planet's highly – endangered yet fragile food chain."
